Pumpkin Smoothy
Ingredients-
Add all the ingredients to your blender or food processor. Blend to yummy goodness and drink!
- 1 Cup pumpkin puree
- 3/4 cup unsweetened vanilla almond milk
- 1 cup banana or vanilla flavor yogurt (you can use greek yogurt, too)
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/4 tsp. allspice
- 2 or 3 tsp. maple syrup (start with 2 tsp. and add a bit more if you like that taste better)
- 1 banana (I like to slice mine and then freeze the slices. Then I add the slices from the freezer)
- Ice (the more you add, the thicker the smoothy)

Toasty Pumpkin Seeds
Ingredients-
Preheat oven to 300 degrees. Put a piece of parchment paper on a baking tray.
Put 2 cups of pumpkin seeds per batch into a large ziplock bag. Add 1 tbls. olive oil (or healthy oil of your choice). Add 1/2 tsp. salt. I like my pumpkin seeds just like this, but you can also add small amounts of other things to see what you like. You can try cocoa (the dry powder), pumpkin pie spice, cinnamon.... all kinds of spices. My mom loves a little ground ginger.
Next, pour the bag of seeds onto the parchment paper and spread evenly across the pan. Bake for 10 minutes, then stir them all around and smooth out across the pan again. 10 more minutes (for a total of 20 minutes) and they are ready to take out of the oven. Take them off the pan and place them on some paper towels to absorb any excess oil. Then.... it's time to eat them!
